on aging wine and couldn't agree more. I
usually caution people by telling them that
aging a wine doesn't necessarily make it
better- it just makes it different. As long
as that "difference" is what you're
looking for, you are good to go.

We insist on using Riedel/Speiglau glassware
in the Wine Bar and deal with the costly
aspect because we think it does matter.
Please don't suggest a visual of styrofoam
as an option. But hey - if you're trying
to make a point - why not go to the extreme.
